Orange Yogurt Cake

I was randomly inspired to bake something, and wanted to use up some of the yogurt I have sitting in the fridge, so voilĂ !

I used to have a yogurt cake recipe that I’ve modified perfectly to my tastes, but I lost that notebook in a move :(. So I’m starting again, now recording my changes online so it’s harder to lose.

Recipe Base:
Lemon Yogurt Cake
(I’m not plagarising the full recipe here, go check it out if you’d like)

Alterations:
1. Zest of 1 lemon -> Zest of 1 large orange
2. 210g sugar -> 150g sugar (but it’s still too sweet)
3. only canola oil used, not a mixture of oils
4. orange slices added to the top

Before baking… looked so pretty

Future alterations to consider:
1. Do the lemon version instead, or combine lemon+orange
2. Put the orange slices at the centre/bottom… the dehydrated slices are ugly
3. Add cinnamon/nutmeg to the batter
4. Combine all the wet ingredients first… mixing the oil after adding flour seems to give too much gluten, i.e. slightly overworked batter, not as tender as I’d like.
5. Further reduce sugar to maybe 120g?
6. Do a version with frozen berries
